Strange cat disease involving a lot of fluid, filling much of the body and around the lungs and heart?

Sounds like a tumor or tumors growing in or near an organ that controls water retention and the hormones that affect healing. That would account for why your vet has no experience with it since tumors can grow in random places and create really weird, one-off sets of symptoms.
